noyas-kitchen-in-bathGrowing up in the UK, Vietnamese food was our link to the culture we left behind. I’ve learned to love sharing my favourite dishes with my many many friends who keep coming back for more!
Vietnamese food is all about balance. It’s simple but so fresh, as we use a lot of different varieties of fresh herbs. They are not just for garnish but play a major part in Vietnamese food. Dishes are aromatic with layers of flavour… the amount of spice controlled to individual taste with use of chilli & dipping fish sauce.

Taj Manku-Scott home cooked Indian foodMasala@home is authentic home cooked Indian food with its own unique flavours. I use typical Punjabi recipes that have been passed down to me from my mother, who taught me at a young age. There are wide range of flavours that vary from a mixture of hot spices and chillies to a subtle hint of ginger and herbs. Each meal is served with Rice and traditional Indian breads, a typical Indian dessert and bharfi.

Simona Cucina An Italian Regional Food ExperienceA magic journey through Italian Regions, discovering the historic roots of the most famous and the least known traditional Italian dishes: when traveling through Italy, a few miles are enough to encounter a different cuisine.
I still have sweet memories of the cosy atmosphere of days spent with my Mamma and Nonna, teaching me how to make egg pasta, or gnocchi with my hands.
Since then, I have developed a passion for cooking, learning different techniques. I pay particular attention to the quality and origin of ingredients and I am a follower of the Slow Food approach “good, clean and fair“. I stress the regional identity of all dishes, and I use locally sourced and organic food.
Italian cooking is extremely diverse, due to a wide range of climatic conditions, from icy Alps to warm Mediterranean islands, and due to a history of many small self governing states, with their own dialects, laws, and …delicious dishes!

Kitchen (con)fusion – An Italian supper club with some British influences

kcfIf you like (con)fusion cuisine, come and join me for my new supper club. My name is Valeria, I am from Naples and moved to Bath in January 2013.
I decided to turn my big passion into a job and to leverage my love for cooking, my very Italian background and the great ingredients I can found in Somerset, to create proper Italian food with genuine local ingredients and Italian, where it is possible.
As well as the supper club, I teach cooking classes, you can hire me to cook in your home, and I have a cooking blog in Italian.
